Years ago, Olive Garden had a pizza on their menu that included Alfredo sauce and chicken. I never ate it, but my mother did at some point. And then it was removed from the menu. I think it makes a reappearance from time to time, though. Mom told me several times how much she liked the dish so I decided to try recreating it. OH. MY. WORD. It is delicious!
To make this, start with the dough. You can use my pizza dough recipe if you don’t have one you like. Roll that out, and it will go into a deep dish pan. You can cook it in a cast iron skillet, or use the Pampered Chef’s round deep dish baker. A pie plate is not big enough.
Then, because I love roasted vegetables in this pizza, I oven roast some veggies to go in it. I usually will meal plan and make the veggies as a side the night before. This way I can make extra for the pizza and save time.
While the dough is rising, make homemade Garlic Alfredo Sauce and set aside to cool.
And finally, dice the chicken. The chicken is optional. Use a rotisserie chicken from the grocery store or cook a chicken breast and chop it up.
Lastly, I like to put fresh mozzarella pieces on top. (Not the shredded stuff; get the ball of mozzarella and cut or tear it into pieces). Sometimes I will put a little Parmesan on top, too.
That’s it. Just assemble and bake! You can change up what veggies or protein you put in there. Sometimes I will brush the edges of the crust with garlic butter or sprinkle fresh or dried herbs on top.
To assemble, roll out the pizza dough and put in your pan and up the sides. Lightly brush with olive oil. Layer the vegetables and chicken in the bottom of the crust. Pour the Alfredo sauce over the veggies and chicken, enough to coat but not where they are swimming in it! Top with sliced mozzarella and sprinkle with freshly shaved Parmesan. Then bake!
